What Are Drug Eggs?

These Korean Boiled Eggs are a great flavourful way of changing up your boiled egg game. These eggs are left in a super flavourful marinade overnight; a mix of sweet, spicy savoury flavours that penetrate the eggs. In Korea, these eggs are called ‘drug eggs’ as they are so addictive!

How to Make Drug Eggs

These eggs are super simple to make – a quick marinade made from soy sauce, chillis and onions with the addition of honey for a sweet note. The rest is marinading time in the fridge. The great thing about these eggs is you can play around with the marinade – try different soy sauces, hot or mild chillis, different sweeteners and perfect your recipe the way you like it! I like to marinade the eggs in a flat container and turn the eggs periodically. You can submerge the eggs fully in a tall container but these eggs are soft boiled and delicate. Try a flat container such as a lunchbox and be gentle!

The Key To ‘Jammy’ Yolks

Boiling eggs to get jammy yolks is really very easy. It’s all down to two things – timing and an ice-bath. Six and a half minutes on a low simmer gets the eggs where you want them to be and the ice bath is a must to keep the eggs nice and jammy. This shocks the eggs and stops the yolks from overcooking.

How to Peel Soft Boiled Eggs

Boiled eggs can be fiddly to peel, especially when soft-boiled. There are a few tips you can use to make sure you don’t ruin these mayak eggs. Adding salt and vinegar to the water can help make the eggs easier to peel, softening the eggshells slightly. Another tip is to start peeling at the wide end of the egg. There is usually a little air pocket which allows you to start the peeling easily using your fingers or a spoon to remove the shell. I like to peel the eggs under running water and it helps to dislodge the shell.

Yes, the eggs are boiled then cooled down and marinated overnight. the contrast between the sweet spicy eggs and hot rice is something I didn’t think I would like till I tried it!

Ingredients

  • For Boiled eggs
  • 6 large eggs
  • 1 tsp salt
  • 1 tbsp vinegar
  • For the Marinade
  • ½ cup of dark soy sauce
  • ½ cup water
  • ¼ cup honey
  • 3 spring onion
  • 4 cloves garlic
  • 1 red chilli
  • 1 green chilli
  • 1 tbsp sesame seeds

Instructions

  • Begin by making the marinade
  • Chop the ingredients and add to a bowl with the water. honey and soy sauce and mix well. Set aside in the fridge for when the eggs are cool
  • Bring a pot of water to a boil, then reduce to a simmer. Add salt and vinegar to the water.
  • Lower eggs in gently and boil for exactly 6 minutes and 30 seconds
  • Remove the eggs from the water gently and place into a pre-prepared ice bath and let cool completely (around 10 minutes)
  • When eggs are cool, peel them by gently tapping the wide-end of the egg with a back of a spoon and peeling away egg shell. This can be done under running water to make it easier.
  • Once eggs are all peeled, place in a container with the marinade, spooning some over the eggs. Cover and place in the fridge for a minimum of 6 hours or ideally overnight.
  • Serve on top of hot boiled rice or noodles with some of the marinade and a drizzle of toasted sesame oil.
