What Are Snickers Bites?

These little beauties are inspired by the viral trend all over Tik-Tok and are a much healthier alternative to a sugar laden snickers bar! Soft, caramel like Medjool dates are stuffed with peanut butter then covered in dark chocolate and chopped almonds. They are just as good if not better than a Snickers bar, but without all the guilt!

Are Dates Healthy?

Dates are a super healthy alternative to a sugary treat and they are all natural! They contain plenty fibre and are chock full of minerals and vitamins too. Dates are so much better for your blood sugar due to their fibre content and will provide you with a sustained release of energy to keep you going. They are still higher in calories than most dried fruit and should be eaten in moderation – especially when stuffed with peanut butter and covered in chocolate!

Ingredients

Medjool dates – these are the most popular and easy to find variety of date and are nice and plump, soft and juicy. You can swap with any other of your favourite types of dates. You can learn more about the types of dates in this article.

Peanut butter – I have opted for crunchy peanut butter to stuff these dates with as I like the crunchy texture.

Dark Chocolate – I love dark chocolate and this makes these little snacks slightly more healthier as it is packed full of antioxidants.

Chopped almonds – I love almonds and love the flavour that they give these little snacks.

How To Make Healthy Snickers Bites

  1. Melt the chocolate

    The first thing to do is melt the chocolate so you can dip your dates. You can do this in bursts in the microwave, or melt over a pan of simmering water.

  2. Remove the stones

    Remove the stones from the dates by slicing down the middle and taking out the centre stone. You can buy pre-pitted dates but they tend to be dry and tough. Opt for dates still with the stones in for juicier soft plump dates.

  3. Fill with peanut butter

    You can fill these dates using a spoon but it can get a little fiddly so it’s easier to use a piping bag – or a homemade version. I just fill a zip top bag with the peanut butter, squeeze it down and push it to the corner of the bag, then snip off the corner and squeeze out the peanut butter into the date.

  4. Dip in the chocolate

    To help coat these little beauties in the melted chocolate, I skewer them with cocktail sticks. It can be hard to fully dip them unless you have a super deep bowl of chocolate. Hold them with the cocktail stick and spoon over the melted chocolate.  Rotating the date on the cocktail stick ensures it gets fully covered. I then let the excess chocolate drip off before placing on greaseproof paper to set.

  5. Top with chopped almonds

    Before the chocolate sets, top with the chopped almonds. You can either chop these yourself with a knife/food processor or used pre-chopped.

  6. Chill

    Place the dates into the fridge for half an hour to allow the chocolate to fully firm and set.

Tips

  • If you have no cocktail sticks, use forks to dip the dates into the chocolate or you could use a paring knife and pierce the dates on the end to dip
  • Use the best quality dates you can find. Don’t opt for the super dried ones as they can be very tough. Juicy plump dates with the stones still in are ideal.
  • Set the dates in the fridge once coated in the chocolate to help them set.

Variations

  • Milk Chocolate – you could coat these dates in milk chocolate instead of dark. Make these little dates even more like snickers!
  • Different nut butters – there are so many different nut butters out there now. Try almond, cashew, or even pistachio to stuff these dates with!
  • Chopped nuts – I opted for almonds but you can swap them out for your favourite type of chopped nut e.g. walnuts, peanuts, pecans

How To Store Snickers Bites

  • Store in an airtight container in the fridge – they will last up to a month.
  • Freeze – cover and freeze in a freezer-safe bag and use within 3 months. Defrost thoroughly overnight in the fridge before eating.

Ingredients

  • 10 medjool dates
  • 4 tsp crunchy peanut butter
  • 100 g dark chocolate
  • 15 g chopped almonds

Instructions

  • Melt the chocolate in a glass bowl over a pan of simmering water (bain-marie) or melt in the microwave
  • Slice each date down the middle with a paring knife until you feel the blade hit the stone, then spread open and remove the stones
  • Fill each date with the crunchy peanut butter using a makeshift piping bag made from a zip lock bag with the corner cut off. Alternatively, use a spoon
  • When all the dates are filled, pierce them with cocktail sticks to allow them to be dipped and covered in chocolate
  • Place the chocolate covered dates on greaseproof paper, then top with chopped almonds
  • Chill for 30 minutes until the chocolate is set, then remove the cocktail sticks and enjoy
