Melt the chocolate in a glass bowl over a pan of simmering water (bain-marie) or melt in the microwave
Slice each date down the middle with a paring knife until you feel the blade hit the stone, then spread open and remove the stones
Fill each date with the crunchy peanut butter using a makeshift piping bag made from a zip lock bag with the corner cut off. Alternatively, use a spoon
When all the dates are filled, pierce them with cocktail sticks to allow them to be dipped and covered in chocolate
Place the chocolate covered dates on greaseproof paper, then top with chopped almonds
Chill for 30 minutes until the chocolate is set, then remove the cocktail sticks and enjoy
