Ingredients
170goat flour
120gsoft brown sugar
40gcaster sugar
1/2tspbicarbonate of soda (baking soda)
120gunsalted butter
170gmilk chocolate
1largeegg
1/2tspsalt
1tspvanilla extract
Instructions
Mix the two quantities of sugar together
Add the sugar to room temperature butter and cream together with a hand mixer until pale and fluffy
Add the egg and vanilla and continue to mix until combined
Add the oat flour and fold togethor until the dough is well mixed and no longer dry
Fold in the chocolate chips/chunks
Using an ice cream scoop, scoop out portions of the dough ready for baking
Add the cookies to a preheated oven at 170℃ for 12-14 minutes, or until golden at the edges
Leave to cool for 5 minutes before transferring to a cooling rack - be gentle as they are fragile whilst still hot ( I use a slotted spatula)
