Ingredients

  • 170 g oat flour
  • 120 g soft brown sugar
  • 40 g caster sugar
  • 1/2 tsp bicarbonate of soda (baking soda)
  • 120 g unsalted butter
  • 170 g milk chocolate
  • 1 large egg
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions

  • Mix the two quantities of sugar together
  • Add the sugar to room temperature butter and cream together with a hand mixer until pale and fluffy
  • Add the egg and vanilla and continue to mix until combined
  • Add the oat flour and fold togethor until the dough is well mixed and no longer dry
  • Fold in the chocolate chips/chunks
  • Using an ice cream scoop, scoop out portions of the dough ready for baking
  • Add the cookies to a preheated oven at 170℃ for 12-14 minutes, or until golden at the edges
  • Leave to cool for 5 minutes before transferring to a cooling rack - be gentle as they are fragile whilst still hot ( I use a slotted spatula)
